vegan tom yum soup with tofu

Dinner time! Today I made vegan Tom Yum soup with Tofu, served with rice and green tea :)

Here's the recipe:

If you don't have Tom Yum paste, you can easily make it by mixing:

Of course you may get a different result depending on your ingredients, but this is not a bad alternative if you don't have Tom Yum paste.

# Instructions

  1. Heat the vegetable oil in a large pot over medium to medium high heat.
  2. Add the chopped onion and minced garlic, cook until they are soft and fragrant.
  3. Stir in the vegan Tom Yum paste and continue to cook for about a minute.
  4. Add the chopped cabbage, carrot, and broccoli to the pot. Combine them by stirring.
  5. Add the tofu cubes to the pot. Cook for a few minutes until the tofu is heated through.
  6. Pour in the crushed canned tomatoes, the soy sauce, and water.
  7. Add in the died basil and paprika.
  8. Season with salt and pepper.
  9. Bring the soup to simmer.
  10. Cover the pot and let simmer for about 20-30 minutes, until the veggies are soft.
  11. While the soup is simmering, cook your rice according to package directions.
  12. Taste the soup and adjust the seasoning if needed.
  13. Serve your soup hot with a side of rice and (optionally) green tea.
